Our last blog talked about how much more we entertain at our coastal second home than in our regular ‘nine to five life home’ (as we call it).
Every summer and on long weekends you’ll find our home full of those we love: family, friends. It’s time we feel we would not have had together, that this place made it happen. So we make the most of it. Because it is those shared celebrations and escapes that make this place truly special to a lot of people.
Food has always been an important part of our celebrations. But here we decided to keep it easy, simple. In the last blog we gave our take on breakfast for a group. Now let’s talk easy lunch, because in a place as beautiful as Scotch Hall the last place you want to be is in the kitchen. Not with all that lovely coastal North Carolina water calling. So here is our take on an easy lunch. Next blog we’ll give you ideas for fun and simple dinners.
Lunches are usually of the picnic variety, always severed water side, on the boat or after swimming or Kayaking. It’s about being outdoors in this place we love.
So we keep these simple and easy to eat with no muss or fuss. All finger food is a great way to go.
Our picnic lunches include: Sliced raw sliced veggies like carrots, cucumbers, celery, radishes, cherry tomatoes packed with individual ranch dressings (you can buy in small individual containers now). Thinly sliced ham, roll this for easy eating. Deviled eggs, sliced watermelon or cantaloupe. Bring some wet naps, and you have an easy and fun lunch.
